Wash and cut a red pepper per person into pieces, with an extra 1 or 2 for the pot. Put with some olive oil into a heavy casserole or frying pan, gently stir-fry until tender and slightly brown. Just before you reach this stage (approx. 15 - 20 minutes), add several cloves of chopped garlic and drained capers. Let them cool, add salt and pepper. Delicious as a starter with fresh baguette.
